Warp Factor Double IPA Galaxy Donuts

These deeply rich donuts with a sweet and colorful glaze are out of this world and made even better with the addition of Warp Factor DIPA. Though baked, the donuts have all the flavor of a traditional donut with added stickiness, decadence, and a hit of citrus from the beer. Whether you are baking for a crowd or just want to sweet treat to keep on hand, these Galaxy Donuts are a fun treat that come together easily!
Makes 11 donuts
Ingredients:
For the Cake:
1 cup of Warp Factor DIPA
¾ cup of all-purpose flour
½ cup of cocoa powder
¾ teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
½ cup of brown sugar
2 large eggs
1/3 cup of olive oil
¼ cup of Greek yogurt
1 teaspoon of vanilla extract
For the Glaze:
1 packet of unflavored gelatin
1 ½ cups of granulated sugar
1 cup water at room temperature water
2/3 cup of sweetened condensed milk
2 cups of white chocolate chips
Gel food coloring
Directions:
Add the beer to a small pot set over high heat. While stirring constantly, let the beer boil and reduce by half. This should take 5 to 7 minutes. Once reduced to a half cup, set it aside to cool.
Preheat the oven to 350°F and grease two donut pans generously with butter.
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and brown sugar.
Add the eggs, olive oil, Greek yogurt, and vanilla.
Using a hand mixer or whisk, beat until smooth.
Using a piping bag, divide the batter across 11 donut cavities.
Place into the 350°F oven and bake for 8 to 10 minutes until an inserted toothpick comes out clean.
While the donuts are still warm, tap them out of the pan onto a cooling rack. Set the donuts aside to cool.
While the doughnuts cool, make the glaze. Place the gelatin in a bowl with ¼ a cup of water to bloom.
Place the remaining ¾ cup of water in a heatproof bowl with the sugar and condensed milk. Microwave on high for 90 seconds until the sugar has dissolved. Whisk in the bloomed gelatin and set aside.
Place the white chocolate chips in a heatproof bowl and melt in the microwave in 30-second intervals, stirring between, until fully melted.
Mix the white chocolate into the gelatin mixture, whisking until the white chocolate is incorporated.
Strain the mixture into four containers and mix in your food coloring.
While still warm, pour the glaze over the cooled donuts and let sit for 10 minutes.
If you want to add stars, you can put a little white food coloring on a pastry brush and flick it onto the donuts.
